Hi everyone! welcome to Low Carb Veggie Life. This is a  membership through which I can share with people my journey as I venture into the world of a low carb diet while maintaining a vegetarian lifestyle. I became tired of vegetarian recipes containing rice, pasta, potatoes and a lot of wheat and gluten. I am vegetarian for health reasons so it seemed crazy to substitute meat with foods with little health benefit

 

My goal is to live a healthy lifestyle, eating foods packed with vitamins and minerals that have a balance in a way that a lot of fad diets don’t

 

So what do I mean when I say low carb? Well, my journey isn’t to go down the ketogenic road, I believe that balance is the key to being healthy, and cutting out carbs completely isn’t good for you either, our body needs carbs. But we should choose the right kind of carbs, ones that can be easily used by our bodies for energy
